Welcome to Joseph's Table

In Chapter One, the first incarnation of Joseph's Table (1995-2002), my driving creative motivation was to bring fruit, both dried and fresh - nuts and such crunch - and primary protein from the earth's fattest lands, most crowded skies, and bluest seas to the high desert of New Mexico.

Now in Chapter Two, the present Joseph's Table, I am discovering New Mexican inspired cuisine. I do maintain the idea that if the products are grown or harvested locally (in New Mexico, Arizona, and Texas), then the cuisine is contemporary Southwestern even if the preparation is French, Italian, or Asian influenced. The air and soil impart a region's purest flavor. I now combine a culinary education in French techniques, my Italian-German family sensibility, and the exoticism of Japanese culinary stylization.

I collaborate with the best Southwestern Chef de Cuisine in the state of New Mexico, Damon Simonton. I run my kitchen like a band, and hire the best players in the area. Presently, Damon and I are pushing each other to move Southwestern cuisine into new configurations. - Chef Joseph Wrede

Joseph's Table is located in Taos, New Mexico, on the historic Taos Plaza, inside the Hotel la Fonda de Taos.

We're open for lunch and dinner seven days a week.
Serving lunch from 11:30 am to 2:30 pm, and dinner 5:30 pm to 10:00 pm.
